It's always good to have a fresh set of eyes to come in and see where growth is available. I come in to restaurants that are doing well but can be done better. Working with the managers and the staff, I help with menu engineering and implementation of operating procedures to help grow the existing business and gain new followers.
Hello I am Jay Ruff, the "Tattooed Chef." After twenty-four years in hot kitchens everywhere from an Army base in Korea to slinging pizzas on the south side to officiating executive culinary events along the Mag Mile, I am utilizing my fine-tuned culinary talent to help you finesse the menu for your newest restaurant, big event, or next consulting venture.
Throughout my extensive culinary training and career, I always remember the most important key ingredient my Sicilian grandmother and Mother, who was an amazing cook, taught me: Love.
